These chiles, grown on local farms in the Hatch Valley of southwestern New Mexico’s Rio Grande region, are harvested, packed, and shipped within a single day, ensuring they reach shelves as quickly as 24 hours after harvest.

After roasting, the chiles should be placed in a sealed bag to cool before the skins are removed for immediate enjoyment or freezing.
